Shall we make the syrup first?
To make the syrup, you'll need 250g of melted unsalted butter, 150g of toasted and finely chopped coconut, 1 liter of water, 660g of sugar, and the juice of 1 lemon. Combine these ingredients in a large pot and cook over medium heat, stirring until the sugar dissolves. Once the sugar has dissolved, simmer gently until it reduces to about 500ml. The process results in a sweet and fragrant syrup, doesn't that already make your mouth water? 🍯
The Secret of Kataifi Pastry
To make the kataifi pastry, you'll need 110g of flour, 80g of cornstarch, ¼ teaspoon of salt, 1 tablespoon of vegetable oil, and 220ml of water. Mix all these ingredients in a bowl and whisk until smooth. Transfer the finished batter to a squeeze bottle. Heat a non-stick frying pan over medium heat and cook thinly by swirling the batter to create a thin, crispy kataifi pastry. Can you imagine how it looks as it's thinly cooked?
Creating the Rich Cream Filling
The cream filling, which is the heart of the dessert, is prepared with extra care. You'll need 1375ml of fresh milk, 1 tablespoon of vanilla bean paste, 9 egg yolks, and 330g of white sugar. Mix these ingredients well, then add 90g of cornstarch. In another bowl, mix 9 egg yolks with 220g of sugar. Once all ingredients are combined and cooked, you'll have a thick and smooth cream filling. 🥛🥚
The Final Touch: Ingredients to Enhance Flavor
There are additional ingredients to make everything even more special. Add 100g of chilled unsalted butter, cut into cubes, the zest of 2 lemons, 180ml of lemon juice, and ¼ teaspoon of salt. Don't forget to include 100g of toasted walnuts for added flavor. Mixing all these ingredients will complete the rich taste of Ekmek Kataifi.
Generous Topping Too!
Finally, the topping ingredients are prepared. Make a syrup by boiling 220g of sugar and 125ml of water. Then, mix 600ml of heavy cream and 2 tablespoons of powdered sugar to create a smooth cream. Decorate with edible flowers for an artistic Ekmek Kataifi. 🌸🌼
