I couldn't contain my excitement when I first heard about this! The visual alone made my mouth water, and I was incredibly curious about the taste. Fortunately, thanks to the recipe they've shared, we can now recreate this delicious dessert right in our own homes. 😊

A Fantastic Harmony of Crispy and Creamy

The star of this recipe is undoubtedly the 'Thai Fried Bananas'. 🍌 Soft lady finger bananas are sliced thickly and fried to a crisp in hot vegetable oil. The texture of the exterior being crispy and the interior being sweetly cooked bananas sounds absolutely exquisite!

Sprinkled with fried sesame seeds for a nutty aroma, and garnished with pandan leaves for an exotic fragrance and color, this dessert is sure to be a delight for both the eyes and the palate.

Flavorful Coconut Batter and Custard

We can't forget the coconut batter that will envelop the crispy fried bananas. 🥥 Mix 300g of rice flour with 55g of caster sugar, a pinch of salt (1/4 teaspoon), and 1 teaspoon of cinnamon powder. Add 400g of coconut milk, whisk gently, and then incorporate 125g of shredded coconut for a rich coconut flavor.

And what's the perfect pairing for these fried bananas? The Pandan Custard! 🍮 Gently warm 200ml of milk and 200ml of cream in a pot with 2 fragrant pandan leaves (tied in a knot) and the seeds from a vanilla bean. (Be careful not to boil!)

In another bowl, whisk together 4 egg yolks and 100g of caster sugar until pale and creamy. Slowly pour the warmed cream mixture into the egg mixture while continuously stirring to create a smooth and flavorful custard. Aren't you excited about the aromatic scent infused by the pandan leaves?
